A prestigious organic blue cheese made from raw sheep's milk and aged in the historic Combalou caves. Each wheel is carefully matured for at least 90 days in these natural limestone caverns, where the unique Penicillium roqueforti creates its distinctive blue-green veining.

The sheep's milk provides an exceptionally rich, creamy paste that melts on the tongue. The natural blue mould develops intense, complex flavours with a perfect balance of salt and tang, complemented by subtle notes of fresh cream and toasted nuts.

Serve at room temperature with crusty bread and a drizzle of honey. For a classic combination, pair with fresh pears or walnuts. Crumble over a simple green salad dressed with walnut oil, or melt into a sauce for steak.
