A5 is the highest grade of Wagyu beef produced in Japan — a classification that covers both yield and quality, with the BMS (Beef Marbling Standard) score assessing the fineness and distribution of intramuscular fat. This sirloin block scores BMS 8–12, the exceptional tier, characterised by dense snowflake marbling throughout the muscle. The intramuscular fat is high in oleic acid, an unsaturated fat that gives A5 Wagyu its characteristic buttery texture and complex umami flavour.
