PGM Balsamic Vinegar - 7 Crown

The 7 Crown is the highest expression of the Piazza Grande PGI range — the most concentrated, the most complex, and the most viscous before stepping up to the DOP tier. The density reaches 1.35, giving it a syrup-like consistency that clings to food and releases its flavour slowly. The colour is a deep, glossy brown with reddish highlights. The aroma is intense — precious woods, cooked must, and a pleasant acetic note that stays in the background rather than biting. The flavour is balanced and well-orchestrated: a rich bittersweet character with a lingering finish that stays on the palate long after the vinegar itself has gone.

It is made following the Mussini family's traditional method: must from selected grapes is fire-cooked directly, then blended with the finest well-aged wine vinegar and matured in small barrels of precious wood. The result is a vinegar that has earned its complexity through time and patience rather than additives or shortcuts. At this density, the 7 Crown is a finishing vinegar — use it sparingly, in drops and drizzles rather than splashes. It is at its best where its character can be tasted directly: over aged Parmesan, fresh strawberries, grilled prawns, a good Ibérico ham, or roasted vegetables. It also makes an excellent dressing for salads when used with restraint, and works beautifully as a digestive in the traditional Modenese manner.
